Went to one seminar and almost felt asleep <3
Had one fancy dinner with friends in P.F. Chang
And bought GODIVA hot cocoa in the nearby bookstore
Got home and enjoyed the hot chocolate
Plus some music
Life is simple but beautiful

I had been looking forward to watching the sunset and sunrise for a long time
And finally I got to see the sunset for the first time at Picktured Rocks National Lakeshore



Then two days later, I watched it again in Grand Rapids



And the next morning, I saw the sunrise there as well


I think this is a circle

Last night I saw the setting sun again in Birmingham, which reminded me of many passed things


Tonight I watched a video about a true story, a true piece of memories and it made me really sad
I don't know what kind of life I'll have in the future
She knows exactly what she wants and at the right time
She could say goodbye to the past and headed forward without turning around
But but but I'm not her
I only know that I can never give up

I wish it would be Sunday tomorrow
Then I could have more alcohol and sleep till noon...

Done with the apartment stuff in Birmingham

I was not a good cook in the past
But I'm making progress every day
Well, cooking is just liking doing experiments
You gotta check references (recipe vs. paper) in advance
And pick up one you think most reasonable
If the result does not turn out to be good
You need to improve your methods (recipes)
The most important one--
You must organize your recipe (or experiments notes) after each try

These days
My life is full of all kinds of stuff
And I also got so many things to learn
But this feeling is so much better than of an empty life
Just don't have enough time for everything
Youth will never come back again
So we must make best use of every minute!

Coconut-lemon cupcakes

I got this recipe by combining several lemon cupcake and coconut cupcake recipes. Luckily, the results turned out to pretty good :)

Ingredients (for 12 cupcakes):
Cakes
⅓ cup Coconut Oil
¾ cup Sugar
¼ cup Soy Yogurt
⅓ cup Soy Milk
¼ cup Lemon Juice
1 Tbsp Lemon Zest
1 tsp Vanilla Extract
1 cup All-Purpose Flour
2 Tbsp All-Purpose Flour
½ tsp Baking Powder
½ tsp Baking Soda
¼ tsp Salt
⅓ cup Almond Meal
½ cup Unsweetened Shredded Coconut

Lemon Frosting
4 ounces Cream Cheese, room temperature
1 cup Heavy Or Whipping Cream
2 Tbsp Lemon Curd
1 Tbsp Confectioners Sugar

Directions:
Cakes:
1. Preheat oven to 350℉. Line a muffin pan with cupcake liners.

2. In a medium bowl, stir together oil, sugar, yogurt, soy milk, lemon juice, lemon zest and vanilla. Mix to combine.

3. In a separate bowl, combine flour, baking powder, baking soda, and salt. Fold in the dry stuff into the liquid. Then fold in the almond meal and shredded coconut.

4. Fill cupcake liners three-quarters of the way full. Bake for 20 to 22 minutes, until a toothpick or knife inserted through the center comes out clean.

5. Transfer to a cooling rack and let cool completely before frosting.

Frosting:
1. Beat the cream cheese with the sugar and lemon curd with an electric mixer until creamy, lighter and fluffy.

2.In a separate bowl, beat the chilled cream until billowy. Then combine with the cream cheese mixture. Continue beating until form hard peaks.

3. Spread the frosting on the fully cooled cakes using spatula or decorating tips and bags.
